Ingredients
1 chopped onion
1 tablespoon cumin
4 minced garlic cloves
2 table spoons olive oil
3 1/2 cups low-sodium chicken broth
3 chopped tomatoes
400g black beans
40g diced green chili peppers
Method
Saute choppedonion, cumin, and 4 minced garlic cloves in 2 tablespoons olive oil.
Add chicken broth, chopped tomatoes, cooked black beans, and one diced green chili peppers. Bring to a boil, cover, and simmer 5 minutes.
Garnish soup with snippedcoriander leaves.
