Ingredients
- Beaten rice (Poha) : 1 ½ cup
- Boiled mixed sprouts : 1 ½ cup
- Peanut oil : 1 tsp
- Mustard seeds : ½ tsp
- Chopped onion : ½cup
- Chopped green chilly : 1 tbsp
- Turmeric powder : ½ tsp
- Salt : for taste
- Lemon juice : 1 tbsp
- Chopped coriander leaves : 1 tbsp
Method of Preparation

Place the beaten rice on a sieve and wash lightly. Drain and leave aside for 10 minutes.

Heat the oil in a non-stick pan and add the mustard seeds.

When the seeds crackle, add the onion and green chilies and sauté on a medium flame for a few minutes or till the onion turns light brown in colour.

Add the mixed sprouts and sauté on a medium flame for 1or 2 minutes.

Add turmeric powder and salt. Mix well and cook on a medium flame for 1 minutes.

Add ¼ cup of water, mix well and cook on a medium flame for 1 to 2 minutes.

Add the beaten rice and lemon juice and mix well and cook on a medium for 2 minutes, while stirring continuously.

Serve the mixed sprouts poha hot garnished with coriander leaves.
