
Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 yellow onion, chopped
- 8 cups chopped broccoli (1½ to 2 pounds)
- 4 cups water
- 1 can (15 ounces) white beans, rinsed and drained
- Salt and pepper, to taste
Toppings:
- 3 tablespoons lemon juice
- 1 cup low-fat plain Greek yogurt
- ¼ cup chopped fresh chives
- Salt and pepper, to taste
Method of Preparation
Wash your hands before you start.
1. Sauté the oil, garlic, onion, and broccoli in a soup pot for ten minutes or until they are soft.
2. Add the beans and water. Puree half of the soup with a hand blender. Add salt and pepper for seasoning.
Simmer for ten minutes after bringing to a boil.
3. Combine chives, yogurt, lemon juice, salt, and pepper. Drizzle on top of warm soup and serve.
