Pesto & White Bean Stuffed Tomato

High Fiber salad

    Ingredients

  • 1 large tomato
  • ΒΌ cup canned white beans, rinsed
  • 2 teaspoons pesto
  • Torn fresh basil for garnish

    Method of Preparation

  • Halve tomato horizontally and hollow out the halves. Fill with beans, drizzle with pesto and sprinkle with salt. Garnish with basil, if desired.
